How to Make Chocolate Brownie Muffins

As a brief overview, here is how to make this chocolate brownie muffins recipe:

  1. Combine your dry ingredients: Stir together the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a mixing bowl.
  2. Whisk together your wet ingredients: Combine the milk, egg, melted butter, and vanilla in a separate mixing bowl.
  3. Combine the two: Fold the dry ingredients in with the wet, and use a spatula to stir together until just combined. Stir in the chocolate chips.
  4. Fill your muffin cups: Portion the batter evenly between 12 muffin cups.
  5. Bake and enjoy: Place in the oven and bake for about 20 minutes. Once the muffins have cooled to room temperature, you can store them in a sealed container for up to 5 days or in the freezer for up to 3 months.

Tips for Making Chocolate Brownie Muffins

Here are some pointers for baking the best brownie muffins at home:

  • Use room temperate ingredients: To keep your batter smooth, make sure that the milk and eggs are at room temperature. To do this, simply take those ingredients out of the refrigerator about one hour before beginning the recipe.
  • Avoid over-mixing: For fluffy muffins that rise well, do not to over-mix the muffin batter. Over-mixing will cause your muffins to be dense and flat. When adding the wet ingredients to the dry ingredients, mix them together until just combined.
  • Use an ice cream scoop: Try using an ice cream scoop to portion the batter into the muffin pan cups. It will help ensure the batter is evenly distributed.
  • Do a poke test for doneness: See if your muffins have finished baking by doing a poke test on the inside. To do this, stick the center of a muffin with a wooden toothpick. If the toothpick comes out clean, the muffins are done baking and can be removed from the oven.

Use the simple tips above to ensure your brownie muffins turn out perfect every single time!

Frequently Asked Questions (FAQ)

Here are some common questions (with answers!) that you may have about eating and/or making chocolate brownie muffins:

Are Brownie Muffins Good For You?

If you’re a regular reader of my food blog, you know that I generally like to keep things as nourishing as possible. However, healthy eating can definitely include indulging in sweets and desserts in moderation. So this is one of those recipes for those occasions when you feel like treating and/or rewarding yourself.

One thing you can feel good about is since these brownie muffins are homemade, you know exactly what’s inside the batter. This makes them better for you than most pre-packaged muffins sold at the grocery store, which are usually overly-sweet and contain lower-quality ingredients.

Can You Freeze Brownie Muffins?

Yes, you can freeze the muffins for up to 3 months. Once they are done baking, allow them to cool off completely. Then, place each one in a freezer-safe zipped-top bag or container and pop the muffins in the freezer.

When ready to eat, thaw the muffins in the refrigerator or out on the counter. To warm the muffins up, you can either microwave them on high for about 20 seconds or bake them in the oven at 300°F (149°C) for 5 to 10 minutes.

Give me all the chocolate! I love that you used melted butter instead of oil, like usual, in these types of muffins. (:
