Spicy Thai Pumpkin Soup (Easy Keto & Vegan Recipe)
- 1 tablespoon coconut oil
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 1 tablespoon fresh grated ginger
- 2 tablespoons Thai red curry paste
- 1 (15-ounce) can pumpkin purée
- 2 cups vegetable broth
- 1 (14-ounce) can coconut milk
- 1 tablespoon lime juice
- Salt and pepper, to taste

- In a large pot, heat the oil over medium heat. Add onion and sauté for 4 minutes until softened.
