- 1 tablespoon sesame oil
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 2 teaspoons fresh grated ginger
- 4 cups vegetable broth
- 2 cups water
- 2 tablespoons soy sauce
- 2 teaspoons Sriracha
- 1 teaspoon rice vinegar
- 8 ounces rice noodles
- Optional garnishes: Sliced green onions, chopped fresh cilantro, and sesame seeds
In a large pot, heat the oil over medium heat. Add the onion and cook for 4 minutes or until softened.
Add the garlic and ginger. Sauté for 1 minute until fragrant.
Add the broth and water. Increase heat to high and bring to a boil.
